Giving your body a break from tons of food and leaning into a broth and soup and salad day is always refreshing.  If you’re feeling the need for a refresh-  as I was- drink lots of soup for part of the day, with loads of water, tea and snacks if you’re hungry- and naturally detoxify, re-mineralize and hydrate and without stress.

This detox soup is a perfect way to fill up on superfoods and electrolytes and herbs and vitamins… and it’s vibrantly delicious!

This soup features lots of spices and herbs that are revitalizing!

Cabbage: Cabbage is rich in vitamin C which is a huge immune booster. It also holds properties that are very anti-inflammatory.

Kale: Kale contains a lot of fiber, potassium, B6 and vitamin C which can aid in the health of your heart. According to Medical News Daily, “Kale is high in fiber and water content, both of which help to prevent constipation and promote regularity and a healthy digestive tract. It also contains vitamin, which promotes iron absorption, and B vitamins, which are essential for the release of energy from food.”

Ginger: Ginger contains the bioactive compound, gingerol, which gives it medicinal properties and boosts the immune system.  It also has powerful anti-inflammatory and anti-oxidant properties. Gingerol, the active ingredient in ginger, can help your body fight and prevent infections and circulatory issues .

Carrot: Carrots are rich in beta-carotene which aids in the improvement of your vision. Beta-carotene has also been shown to reduce the risk of cancer of the lung, throat, breast, intestine, bladder and prostate. Raw carrots are super-important to eat or juice as well, so keep carrots on hand daily!

Lemon: Lemons help alkalize your body and restore a balanced Ph level. They are also rich in vitamin C, vitamin B6, vitamin A, vitamin E, folate, niacin and thiamin.   Lemons can aid in the prevention of diabetes, constipation, high blood pressure, fever and indigestion.

Turmeric Curcumin is the main active ingredient in turmeric. It has powerful anti-inflammatory effects and is a very strong antioxidant.

James A. Duke, Phd. researched and reported on turmeric:  “Reviewing some 700 studies, Duke concluded that turmeric appears to outperform many pharmaceuticals in its effects against several chronic, debilitating diseases, and does so with virtually no adverse side effects.”

So…

Get to chopping those veggies!  It’s time for a big pot of soup!!! Double it if you want to have soup for a few days… it’s even better on day 2 when the flavors melt together and intensify! Oh, and please improvise.  This is a well-balanced soup blended by my sister Nicole who is a major mixologist, but you can make your own way with what you’ve got on hand!

Nicole’s Vibrant Detox Soup:

Ingredients:

3 carrots, diced

7 cups of distilled water

3 celery stalks, diced

I cup of chopped fresh tomatoes (I used organic grape tomatoes)

Half of a red onion diced

1 cup of kale – chopped and de-stemmed

1 cup of red cabbage, shredded

1 parsnip – whole

3 garlic cloves, minced

I teaspoon of powdered turmeric

1 teaspoon of fresh minced ginger

Salt and pepper to taste (cayenne pepper if you like it spicy)

¼ of a teaspoon of cinnamon

Half a lemon, squeezed

To make the soup:

In a large stock pot add 1 tablespoon of olive oil. Once the oil is hot, add the onions, carrots and celery. After about 3 minutes, add in the ginger, garlic, parsnip, and tomatoes. At this point you can sea salt and pepper the vegetables to release their flavor.

Once the onion looks translucent (keep stirring), add the water.

When the stock comes to a boil add the kale, cabbage, turmeric, and cinnamon.

Reduce the heat and cook on medium high for an hour and a half.

Add more salt and pepper to taste.  Fresh lemon juice at the end, or before you serve each bowl, is spectacular!
