Sunflower Energy-Building Smoothie!

Today, I needed to start an energy-smoothie-streak.

Not only do I have a pile of very fun stuff to finish, I have a bunch of parties to visit…and of course that’s really my motivation to get energized!

Did you know that your brain alone- just thinking critically and not even moving from a chair- requires a massive amount of calories and nutrients to be brilliant?!

Shelled raw sunflower seeds are full of iron, calcium,  vitamin B-6, magnesium and healthy fats.  They also become super-creamy in a smoothie. After being soaked for a few hours in clear water, they are easy to digest.  Add in some other iron-rich, leafy greens, dates, lemon to add both brightness and boost the ability of your body to absorb all this good stuff…. Oh, this is so yum!

There’s nothing quite like being anemic or physically drained nutritionally, and it happens to the best of us under stress, even the hyper-wellness-aware.  If you’ve been there, you know how much it bums you out to start dragging through the day in a way that even coffee can’t fix!

When I find myself getting anemic (dark circles under eyes even after sleeping, exhausted, uninspired are my cues that I’m getting iron deficient!) I drink a version of this smoothie.  Also, I start eating beets, spinach, and loads of other iron rich foods, cooking in Cast Iron pots, taking vitamin B-12, and filling up on lots of oranges with meals to get my iron levels up when I feel myself physically slogging around and losing sparkle.  Vitamin C helps you absorb iron in a useable form, so drink OJ or add vitamin C to your iron-rich meals to absorb much more of it.

This smoothie tastes a bit like lemon pie.  When I need it, I drink it so fast I sometimes forget to enjoy it (!) but I hope you do!

Sunflower Energy-Building Smoothie 

  • 1/2 cup raw sunflower seeds soaked in filtered water (*I use THIS filter, and love it!)
  • 2 cups + (up to you how creamy or liquidy you’d like it) of filtered water
  • about 1 cup of raw baby kale or spinach
  • 4-5 medjool dates
  • 1/2 lemon- you can juice it into the smoothie or peel and seed and blend it
  • 1 ripe banana

Blend it all up.  It is amazing.

I have this daily as part of an energy-building switch I make when I start to get super-busy.
