Massaged Kale Salad!

Today’s bit of energy food is all about the simplicity of kale rubbed with oil and sea salt.  Yep.  That’s what makes a great kale salad. That’s it!

Here is the absolute fastest and most amazing way I know to make a super-addctive kale salad.  You get to pick the accessories, but today we’ll focus on the kale done beautifully!

Massaged Kale Salad

A big bunch of organic kale.  I like flat-ish leaves.

About two teaspoons of sea salt (I like it salty, it goes a long way so its not really too much.

And a few tablespoons of olive oil ( I also like more oil- it creates a “softer” salad and seems more “dressed” and fulfilling.  For raw salads I break out the organic and extra virgin oilive oil, but use what you have on hand.

1 tbs lemon juice or 1 tbs apple cider vinegar (optional, I skip it)

To make the kale:  Wash it extremely well and dry as best as you can with a clean dish towel.  Cut the tough stalks out of the centers (*this makes a huge difference) and chop into small pieces.  Put it in a bowl, pour on the salt and oil… then start the massage!

Rub the leaves together for a few minutes with the salt and oil.  You will feel the leaves transform. They are unbelievably amazing.

Try a leaf.  If it feels almost “cooked”, soft, easy to chew and full of flavor… it is amazing!

Ideas to dress the rest of the salad:

  • Fresh cracked pepper
  • Chopped shallot
  • Avocado
  • Carrots scraped in ribbons with a peeler
  • Raw nuts of seeds (here I used pecans)

& whatever else your heart desires!

I would eat this every day if I could keep enough kale in stock.  It makes me feel positively amazing and  kale is an uber-nutritious storehouse of vitamin K, A & C, phytochemicals, antioxidants, iron and calcium to name a few of the astonishing superfood benefits waiting in most supermarkets and farmer’s markets near you!

If you don’t want the oil, the kale also softens like it is steamed just from a salt rub.
